The concern isn't acute toxicity from a single cup. It's the cumulative effect of daily consumption over time, and the question of whether lower is better when you have the option.

Where Do Mycotoxins Come From in Coffee?

Mycotoxins in coffee originate from mold growth on the beans. This can happen at several points in the supply chain:

  • During growing: Coffee grown at lower altitudes in high-humidity environments is more susceptible to mold. High-altitude growing regions tend to produce cleaner beans because cooler temperatures inhibit mold growth.
  • During processing: Wet processing (washed coffee) generally produces lower mycotoxin levels than natural processing, where beans dry in the fruit and have more opportunity for mold development.
  • During storage and transport: Improper storage, particularly exposure to moisture, is one of the most significant contributors to mold and mycotoxin development in green coffee.

Roasting reduces but does not eliminate mycotoxins. Studies show that roasting can reduce ochratoxin A levels by 50 to 90 percent depending on roast level and duration, but heat-stable compounds can persist in the final cup. This is why sourcing and storage practices matter, not just roasting.

  • High-altitude origins: Cooler growing conditions inhibit mold. Ethiopian, Colombian, and Kenyan coffees from high-altitude regions are generally lower risk.
  • Washed processing: Wet-processed coffees tend to have lower mycotoxin levels than naturals.
  • Specialty grade: Specialty-grade coffee has stricter defect standards. Defective beans are more likely to carry mold.
  • Transparent sourcing: Buy from roasters who know where their beans come from and can speak to their supply chain.
  • Freshness: Fresh-roasted coffee from a roaster with good storage practices is inherently lower risk than old coffee with unknown storage history.
