What Are Clean Coffee Beans?
Clean coffee beans are beans that are free from the mold, mycotoxins, pesticide residues, and physical defects that can be present in lower-quality coffee. The term is used most often in contrast to commodity-grade coffee, which is sourced primarily for price and may contain higher levels of these contaminants due to poor growing conditions, improper processing, or inadequate storage.
Specialty-grade coffee, by definition, starts cleaner. It's grown with more care, processed more carefully, and inspected more rigorously at every stage of the supply chain. But not all specialty coffee is equal, and sourcing decisions matter.
What Contaminants Are Found in Low-Quality Coffee?
The two most discussed contaminants in coffee are mold and mycotoxins.
Mold can develop on coffee beans during growing, processing, or storage, particularly when beans are exposed to excess moisture or stored in humid conditions. Mold growth is more common in low-altitude, high-humidity growing regions and in coffee that's processed or stored carelessly.
Mycotoxins are toxic compounds produced by certain molds. The two most relevant to coffee are ochratoxin A and aflatoxin. These compounds are heat-stable, meaning they survive the roasting process. Research has found mycotoxins in commercial coffee samples at varying levels, with commodity-grade coffee generally showing higher concentrations than specialty-grade coffee.
As a nurse, I'm familiar with how chronic low-level exposure to toxins can affect the body over time. I'm not suggesting that a cup of grocery store coffee is going to make you sick. But I do think it's worth knowing what's in what you're drinking every day, especially when better options exist.

- Specialty grade: Specialty-grade coffee (80+ on the SCA scale) has stricter defect limits than commodity coffee. Fewer defects generally means cleaner beans.
- Trusted sourcing: Buy from roasters who are transparent about where their beans come from and who they buy from. Vague sourcing language is a red flag.
- Proper storage and freshness: Mold develops in moisture. Fresh-roasted coffee from a roaster with good storage practices is inherently lower risk than old coffee sitting in a warehouse.
- Small-batch roasting: Smaller batches mean more attention to each roast and faster turnover from roast to cup.
