What Is Mold in Coffee and Why Does It Matter?
Coffee is an agricultural product grown in warm, humid environments. Those same conditions that produce exceptional flavor also create opportunity for mold and mycotoxin contamination during harvesting, processing, and storage.
Mycotoxins are toxic compounds produced by certain molds. They are heat-stable, meaning roasting alone does not eliminate them. The only way to know your coffee is clean is to test it.
Most commercial coffee is never tested. It moves through a long supply chain from farm to warehouse to store shelf, with no verification of what's in the bag.
How ARDITO Approaches Mold-Free Coffee
Our approach starts at sourcing. We select high-altitude, traceable lots from farms where processing standards are high and contamination risk is lower. High-altitude coffee matures more slowly, which reduces the conditions that favor mold growth.
Our trusted importers also independently test green coffee, inspecting for:
- Mycotoxins (including Ochratoxin A and Aflatoxins)
- Mold and yeast
- Heavy metals
Only lots that pass are roasted and shipped. No exceptions.
