What Goes Into Most Coffee and Why It Matters
Most coffee drinkers never think about what happens before the bag is sealed.
The reality is that commercial coffee is often grown, processed, and stored under conditions that allow contamination to develop quietly. Mold forms during improper drying or humid storage. Mycotoxins are toxic compounds produced by certain molds and they can persist even after roasting. Heavy metals like lead, mercury, cadmium, and arsenic accumulate in soil and migrate into the plant. Yeast activity can affect quality and composition in ways that go undetected by roasters who do not test.
None of this is visible in the bag. None of it affects the color of the roast. And for most of the industry, none of it is tested.
We believe that matters. Not as a warning, but as a standard worth holding.
The ARDITO Standard: What We Look For
Every green coffee we source is tested against four categories of concern before it is purchased from importers before it enters our roastery.
Mycotoxins. Mycotoxins are naturally occurring compounds produced by mold growth on crops. They can form during harvest, transport, or storage. Sourcing mycotoxin-free coffee requires active verification, not just careful selection. We test for the presence of mycotoxins at levels that would exclude a batch from our supply chain entirely.
Mold and Yeast. We test specifically for mold and yeast contamination. Mold-free coffee is not an accident of circumstance. It requires controlled post-harvest handling, proper drying, and conditions that are documented and verified. We confirm this through testing, not assumptions.
Heavy Metals. Lead, mercury, cadmium, and arsenic are our four tested metals. These elements occur naturally in the environment and can concentrate in agricultural products depending on soil conditions and farming practices. All four are screened in every lot we source. None pass our threshold.
This is the floor. Every ARDITO blend- ORIGINALE, ESSENZA, NERO, VELOCITÀ, and MONORIGINE begins with green coffee that has met each of these four standards.
There is a meaningful difference between a brand claiming its coffee is clean and a brand proving it.
We do not self-certify. We only source from importers that hold the highest standards of green coffee, ensuring everything is tested before being delivered to our roastery.
This distinction is not a marketing point. It is a structural choice. We built our sourcing process around external verification because we believe the standard should be verifiable, not merely stated.
From the Source to the Cup
Sourcing integrity does not stop at the lab report. It shapes what the cup tastes like.
Clean coffee beans are free from mold, yeast contamination, and the off-flavors that accompany poor storage conditions, which behave differently in the roasting drum. They express the origin character more clearly. They respond to heat with predictability. The floral notes in MONORIGINE's Ethiopia Yirgacheffe, the syrupy structure of NERO, the balance in ORIGINALE- these qualities are not only a function of roast craft. They begin with green coffee that has not been compromised before it reaches us.
Toxin-free coffee, in our view, is not a premium feature. It is the prerequisite for everything else we do.
When we roast in small batches, when we manage heat curves to preserve sweetness and clarity, and when we dial in each blend for the specific brewing method it is designed for. All of that work depends on starting with material that is genuinely clean. Mold-free coffee does not automatically taste great. But coffee that is not mold-free cannot taste the way we intend it to.
The sourcing standard protects the craft. The two are not separate concerns.
