It sounds like popcorn popping, soft rolling cracks that move through the batch over 60 to 120 seconds. At this point the coffee is technically drinkable. Most specialty light-to-medium profiles finish well before second crack. Pushing into or past second crack shifts the cup toward chocolate, smoke, and lower acidity. Development time is the period from the start of first crack until the beans are dropped into the cooling tray. Roasters express this as a ratio:

  • 15 to 22% DTR — widely used target for balanced specialty filter and espresso
