The roast date tells you exactly when the coffee was roasted, which is the single most useful piece of information for knowing whether what's in your bag is fresh or past its peak. Why Does the Roast Date Matter?
Coffee is an agricultural product. Once roasted, it begins a slow process of off-gassing and oxidation. In the first 24 to 72 hours after roasting, beans release CO2 rapidly. This is actually a good sign. It means the coffee is fresh. But it also means brewing too soon can produce uneven extraction.
The sweet spot for most coffees is between 5 and 21 days after the roast date. During this window, the CO2 has settled enough for even extraction, but the aromatics and flavor compounds are still vibrant and intact.
How Long Does Fresh Roasted Coffee Stay Good?
Properly stored in an airtight container away from light and heat, whole bean coffee roasted fresh stays at peak quality for 2 to 4 weeks after the roast date. Ground coffee degrades faster, typically within 1 to 2 weeks, because grinding dramatically increases the surface area exposed to oxygen.
After the peak window, coffee doesn't become unsafe to drink. It simply becomes flatter, less aromatic, and less complex. The nuance fades. What was once bright and layered becomes dull and one-dimensional.
What to Look for on a Coffee Bag
When buying specialty coffee, look for a roast date, not a best-by or expiration date. A best-by date can be set 12 to 18 months out from roasting, which tells you almost nothing about freshness. A roast date gives you the actual information you need to judge quality.
If a bag doesn't have a roast date, that's worth noting. It usually means the coffee was roasted in bulk and warehoused before packaging.
