What Does Acidity Mean in Coffee?
Acidity in coffee doesn't refer to pH the way it does in chemistry class. It refers to a perceived brightness or liveliness in the cup. High-acid coffees taste sharp, crisp, and fruit-forward. Low-acid coffees taste smooth, round, and mellow, with flavors that linger rather than snap.
Coffee acidity comes from organic acids that develop during growing and roasting. Chlorogenic acid, citric acid, and malic acid are the main contributors. The good news is that roast level, origin, and brewing method all influence how much acidity ends up in your cup.
What Makes a Coffee Low Acidity?
Several factors push coffee toward the lower end of the acidity spectrum:
- Darker roast: Heat breaks down acidic compounds. Medium-dark and dark roasts are naturally lower in acidity than light roasts.
- Low-altitude origins: Beans grown at lower elevations, like those from Sumatra and Brazil, tend to be earthier and less bright than high-altitude Ethiopian or Kenyan coffees.
- Cold brew method: Cold water extraction produces significantly less acid than hot brewing. Cold brew can have up to 67% less acidity than drip coffee.
- Coarse grind and longer steep: Reduces extraction of acidic compounds.

- Brew with a paper filter, which removes some of the oils that can irritate the stomach.
- Avoid drinking coffee on an empty stomach.
- Try cold brew, which is the lowest-acid brewing method available.
- Choose medium-dark or dark roasts over light roasts.
