Most commercial coffee is roasted weeks or months before it reaches the shelf. The chlorogenic acids and polyphenols that make coffee a meaningful source of antioxidants begin to degrade the moment roasting is complete. I wanted something fresher, cleaner, and more consistent with the care I try to bring to other health decisions. For me it means a specific set of non-negotiable standards:
- Specialty-grade green coffee sourced for quality and traceability
- Independent lab testing for mycotoxins, mold, yeast, and heavy metals on every lot
- Small-batch roasting to maintain freshness and consistency
- Shipping within days of the roast date
- Roast profiles that respect the bean's natural compounds and preserve polyphenol content

Building the Ritual
A better coffee ritual does not have to be complicated. Choose clean beans. Note the roast date. Store them properly in an airtight container away from heat and light. Brew with attention and the right water temperature. That small sequence turns a daily habit into something more deliberate and more rewarding.
